apple streusel bars for a crowd

I got these from Life, Love, & Sugar, and I made one batch that fits in an 8X8 inch square pan. For 32 bars for a gathering, I tripled the recipe and that fit two industrial-sized cafe cake pans.

Here's the amount for one batch. (I've changed a few ingredients just a wee bit.)

For the bars you'll need:
  • 1.5 cups (195 g) flour
  • 3/4 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon nutmeg
  • sprinkles of cardamom
  • heck, even add some allspice if you like
  • 1/8 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup (168 g) melted butter or margarine
  • 1/2 cup packed brown sugar (112 g)
  • 2 teaspoons vanilla
  • 2 eggs
  • 2.5 cups peeled and diced apple (I used 1 large Japanese apple)
For the streusel topping you'll need:
  • 2/3 cup flour (87 g)
  • 1/3 cup packed brown sugar (75 g)
  • 1 teaspoon cinnamon
  • sprinkles of nutmeg and cloves
  • 3 Tablespoons melted butter or margarine (42 g)
Do this:

1. Oven 170 C or 350 F.
2. I used an 8X8 inch pan and put in baking paper, then greased that.
3. Whisk these ingredients for the bars in a medium bowl: flour, spices, salt, and baking powder.
4. In a separate larger bowl, whisk the butter, brown sugar, vanilla, and eggs.
5. Throw the dry ingredients in with the wet and whisk them all up.
6. Put half the mixture in the pan and flatten it out.
7. Put 3/4 of the diced apples in the remaining batter and stir together.
8. Spread that across the batter in the pan and smooth out.
9. In a bowl, combine the dry ingredients for the streusel and then mix in the butter till crumbly.
10. Put the remaining 1/4 of the apples in with the streusel, mix up, then crumble that over the top of the batter in the pan.
11. Bake about 35 minutes.

Triple for a church English Cafe and sprinkle with powdered sugar to make them look even more festive.
